Step 1: The Raw Room
It all begins in our raw room, where we receive the highest-quality cuts of beef. Each piece is carefully inspected to ensure it meets our standards, sliced then sent to the prep room.
Step 2: Marinating in Tumblers
Next up, our signature spice blends come into play. From smoky Mesquite to zesty Jalapeño Honey, every flavor starts with the perfect balance of spices. The meat and spices are placed into tumblers which allows the flavors to deeply penetrate each slice, creating the rich, mouthwatering taste you’ve come to love.
Step 3: Hanging the Meat
After marination, the meat is hung on jerky trucks. This ensures every piece is ready for the next stage: smoking.
Step 5: Smoking to Perfection
Our jerky is smoked in specialized smokehouses, infusing each piece with rich, savory aroma and flavor. This is where the meat transforms from raw cuts into the tender, chewy jerky that jerky enthusiasts crave.
Step 6: Removing from Trucks & Packaging
Once perfectly smoked, the jerky is removed from the trucks and carefully packaged. We take pride in packaging that keeps your jerky fresh, flavorful, and ready for snacking.
Step 7: Shipped to You
Finally, your jerky is boxed up and shipped straight to your doorstep. Whether you’re stocking up for a road trip, adventure, or just a snack at home, Uncle Ervin’s jerky is ready to deliver a taste of Texas to you.
